Serving Suggestions
Serve these creamy refried beans alongside tacos, burritos, enchiladas, quesadillas, or Mexican rice. They also work well as a warm dip for tortilla chips or as a creamy layer in nachos and burrito bowls.Recipe Notes
Do not drain the canned pinto beans because their liquid helps create the creamy consistency. Mash the beans completely for a smooth result or leave some beans partially intact when you prefer more texture.Variations
Add chopped jalapeรฑo or cayenne pepper for additional heat. Fresh cilantro and lime juice provide a brighter finish. For an even smokier flavour, increase the smoked paprika slightly or add a small amount of chipotle pepper.Storage
Allow leftover beans to cool before transferring them to an airtight container. Refrigerate for up to four days. Reheat gently in a skillet or saucepan, adding a splash of water or vegetable broth if the beans become too thick.Wine Advice
A light Tempranillo complements the earthy beans and smoky spices. A crisp Sauvignon Blanc provides a refreshing alternative, particularly when serving the beans with spicy toppings.Nutrition values
————————————————————————————————–
These Mexican refried beans are creamy, savoury, and packed with flavour from pinto beans, browned onion, garlic, cumin, smoked paprika, and oregano. Using canned beans makes the recipe quick enough for everyday cooking, while keeping their liquid creates the soft, creamy consistency associated with a good plate of refried beans.
Despite the English name, refried beans are not actually fried twice. The name comes from the Spanish term โfrijoles refritos,โ which refers to beans that are cooked and then fried or sautรฉed. This plant-based version uses nondairy butter instead of traditional animal fat. Browse our Beans recipes for more ways to use this affordable and versatile ingredient.
Why Pinto Beans Work So Well
Pinto beans have a naturally creamy interior and mild earthy flavour, making them particularly suitable for mashing. Cooking the beans together with their canning liquid helps soften them further and gives the finished dish a smooth consistency without requiring cream.
The onions should be cooked until tender and lightly browned before adding the beans. This develops sweetness and provides much more flavour than simply simmering everything together. Garlic, cumin, oregano, and smoked paprika then create a warm and savoury base.
Getting the Perfect Texture
The texture is completely adjustable. Mash the beans thoroughly for a smooth and creamy result or leave some partially intact for a more rustic consistency. If the beans become too thick during cooking or reheating, stir in a small amount of water or vegetable broth.
For thinner Mexican refried beans, reserve additional liquid before mashing. Remember that the mixture will continue to thicken slightly as it cools, so it is usually better to leave the beans a little softer than the final consistency you want.
Serve Them with Mexican Favourites
Refried pinto beans are a natural accompaniment to tacos, burritos, enchiladas, quesadillas, and Mexican-style rice. Spoon them into tortillas as a creamy base before adding vegetables, avocado, salsa, or other fillings. Explore our Taco recipes for more combinations.
The beans also make an excellent warm dip. Transfer them to a serving bowl and top with chopped cilantro, jalapeรฑo, tomato, avocado, or a squeeze of lime. Serve with tortilla chips for an easy appetizer. Our Dips recipes offer more ideas for party food and sharing plates.
Easy Flavour Variations
Fresh jalapeรฑo or cayenne pepper can be added when you want more heat. Chipotle gives the beans a deeper smoky flavour, while fresh lime juice provides acidity and keeps the finished dish tasting bright. Chopped cilantro makes an excellent fresh garnish.
For an especially creamy version, mash the beans almost completely and stir them frequently during the final minutes of cooking. If you prefer additional texture, keep roughly one quarter of the beans whole.
Storage and Reheating
Allow leftovers to cool before placing them in a clean airtight container. Refrigerate promptly and use within four days. Reheat gently in a skillet or saucepan, adding water or vegetable broth as necessary to restore the creamy texture.
