Ingredients
- 1 cup millet
- 2 carrots peeled and sliced
- 2 potatoes peeled and cubed
- 1 zucchini sliced
- 1 red bell pepper chopped
- 1 onion diced
- 2 cloves garlic minced
- 1 can 14.5 oz diced tomatoes
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish optional
Instructions
- Rinse the millet under cold water and set aside.
- In a large pot, heat olive oil over medium heat.
- Add the onion and garlic and sauté for 3-4 minutes, until softened.
- Add the carrots, potatoes, zucchini, and bell pepper to the pot.
- Stir and cook for 5 minutes.
- Add the millet, diced tomatoes, vegetable broth, thyme, rosemary, salt, and pepper.
- Stir to combine.
- Bring the stew to a boil, then reduce the heat and let it simmer, covered, for 35-40 minutes, or until the millet is tender and the vegetables are cooked through.
- Taste and adjust seasoning with more salt and pepper if needed.
- Serve hot, garnished with fresh parsley if desired.
