Ingredients
- 12 ounces Zucchini peeled and cubed
- 1 small Onion chopped
- 1ยฝ tablespoons Unsalted Butter
- 6 ounces Mushrooms sliced
- 3 large Eggs lightly beaten
- 1โ cups Cheddar Cheese grated
- ยพ teaspoon Dried Basil
- ยฝ teaspoon Kosher Salt

Instructions
- Preheat the oven to 325ยฐF (160ยฐC).
- Melt the butter in a skillet.
- Sautรฉ the mushrooms and onion until the onion is soft and the mushrooms are tender.
- While the vegetables are sautรฉing, steam the zucchini until tender and mash it coarsely.
- In a medium-sized bowl, combine the mashed zucchini and eggs.
- Add the sautรฉed mushrooms and onions to the zucchini-egg mixture and stir to combine.
- Season with dried basil, salt, and pepper.
