This salad tastes just as delicious if you substitute baby spinach leaves for the salad greens. Serve this salad with a simple chicken entree, such as the Chicken Breasts with Brandy and Mustard Sauce
Ingredients
- 4 cups mixed salad greens
- 2 large seedless oranges peeled and sliced horizontally 1/4-inch thick
- 4 radishes trimmed and sliced 1/8-inch thick
- 2 tablespoons orange juice
- 4 teaspoons red wine vinegar
- 2 teaspoons honey
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Arrange the salad greens on a serving platter.
- Top with the orange and radish slices.
- Stir together the orange juice, vinegar, and honey in a cup, blending well to dissolve the honey.
- Add the olive oil, salt, and pepper.
- Drizzle the dressing over the vegetables and serve immediately, so the salad greens won’t wilt.
