Perch with Martini Sauce
Serve this piquant fish dish over cooked rice or orzo, or pass sourdough bread for dipping into the sauce.
Ingredients
- 1 tablespoon olive oil
- 1 onion chopped
- 1 garlic clove minced
- 1 can 14 1/2 ounces diced tomatoes, undrained
- 1/2 cup pimiento-stuffed olives sliced
- 2 tablespoons gin
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 4 large perch fillets
- 1 tablespoon minced chives
Instructions
- Heat the olive oil in a large sauté pan.
- Add the onion and garlic and sauté over medium heat for 2 minutes, until limp.
- Add the tomatoes, olives, gin, salt, and pepper and bring to a simmer.
- Gently arrange the perch in the tomato sauce.
- Using a spoon, generously baste the fish with the sauce.
- Cover and simmer for10 minutes or until cooked through.
- Sprinkle with chives.
