Ingredients

  • 4 main-dish servings
  • pounds ripe tomatoes chopped (4 cups)
  • ½ cup packed fresh basil leaves chopped
  • 3 tablespoons olive oil
  • ¼ teaspoon freshly grated lemon peel
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 bag 13 to 16 ounces frozen cheese ravioli
  • cups water
  • ¼ cup freshly grated parmesan cheese

Instructions

  • In large bowl, combine tomatoes, basil, oil, lemon peel, salt, and pepper.
  • Let stand at room temperature at least 15 minutes or up to 30 minutes to blend flavors.
  • Meanwhile, place ravioli in large bowl with water; cover with vented plastic wrap and microwave on High for 10 minutes or until cooked through, stirring once.
  • Add hot pasta to tomato mixture and toss to coat.
  • Sprinkle with Parmesan to serve.
