Ingredients

  • 1 tbsp chopped cilantro
  • 1 cup diced red pepper
  • 4 tbsp half and half
  • Salt
  • 4 large free-range eggs
  • 1 cup shredded cheese
  • Pepper

Instructions

  • Preheat your air fryer to 300°F (150°C) and grease four ramekins.
  • In a medium bowl, whisk the eggs until well beaten.
  • Add the diced red pepper, half of the shredded cheese, half and half, chopped cilantro, salt, and pepper to the eggs.
  • Stir well to combine.
  • Divide the egg mixture evenly between the greased ramekins.
  • Place the ramekins in the air fryer.
  • Cook for 15 minutes, or until the egg cups are set and lightly golden on top.
  • Remove from the air fryer and sprinkle the remaining shredded cheese on top of each egg cup.
  • Serve hot and enjoy!
