Ingredients

  • 2 ripe avocados
  • 600 ml/1pt chicken stock
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped fresh chives
  • 1/2 teaspoon chili powder
  • Salt to taste
  • 2 tablespoons sour cream for serving

Instructions

  • Peel and remove the stone from the avocados.
  • In a blender or food processor, puree the avocado flesh.
  • Add lemon juice, chopped chives, chili powder, and salt to the blender.
  • Blend until smooth.
  • Allow the mixture to chill in the refrigerator for a few hours before serving.
  • To serve, add a dollop of sour cream, stir through, and enjoy the soup chilled.
