Rocky’s Pumpkin Cookies
Ingredients
- ½ cup shortening
- 2 cups flour
- ½ cup brown sugar
- 1 teaspoon baking powder
- ½ cup white sugar
- 1 teaspoon soda
- 1-2 eggs
- 1 teaspoon cinnamon
- 1 cup pumpkin
- Ginger cloves, allspice, if desired
- ½ teaspoon salt
- 1 cup raisins dates, coconut, or ½ cup nuts, as desired
- 1 teaspoon vanilla
Instructions
- Cream shortening and sugars until fluffy.
- Add eggs, pumpkin, salt, and vanilla; mix.
- Sift together flour, baking powder, soda, and spices.
- Add to mixture.
- Add raisins, dates, coconut, or nuts as desired.
- Drop by teaspoons on greased cookie sheet.
- Bake at 375º for 8-10
- minutes.
- Enjoy.
