Ingredients

  • Serves 4:
  • 2 tablespoons extra-virgin olive oil
  • 4 tablespoons red wine vinegar
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1/2 head romaine lettuce rinsed and torn into pieces
  • 2 medium tomatoes cut into eighths
  • 3 thin slices medium onion
  • 3 to 4 ounces jarred white or light meat tuna preferably Spanish, drained and flaked
  • 4 jarred white asparagus, rinsed, trimmed, and cut in half crosswise (optional)
  • 12 small green olives with or without pimiento, preferably Spanish

Instructions

  • In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, salt, and freshly ground black pepper.
  • In a salad bowl, combine the romaine lettuce, tomato slices, onion slices, flaked tuna, white asparagus (if using), and green olives (if using).
  • Pour the vinaigrette over the salad, toss gently to coat all the ingredients, and serve the San Isidro-Style Mixed Salad at room temperature.
