Ingredients

  • 1 lb corned beef chopped
  • 1 14 oz can sauerkraut, drained and rinsed
  • 8 oz Swiss cheese shredded
  • 1 cup Thousand Island dressing
  • 4 oz cream cheese softened
  • 1/4 cup chopped green onions
  • 1 tbsp Dijon mustard
  • 1 tsp caraway seeds optional
  • Salt and pepper to taste

Instructions

  • Combine corned beef, sauerkraut, Swiss cheese, Thousand Island dressing, cream cheese, green onions, Dijon mustard and caraway seeds (if using) in a mixing bowl.
  • Transfer the mixture to a slow cooker.
  • Cook on low for 3-4 hours, or until cheese is melted and dip is hot.
  • Stir occasionally.
  • Season with salt and pepper to taste before serving.
  • Serve warm with rye bread cubes, crackers, or vegetables.
