Ingredients
- 1 tablespoon vegetable oil
- 1 medium red bell pepper cored, seeded and diced
- 1 medium onion thinly sliced
- 1 garlic clove minced
- 1 package about 1 pound refrigerated, cooked, diced potatoes
- 1 package about 17 ounces fully cooked beef tips with gravy
- 1/2 cup beef broth
- 1/4 teaspoon pepper
Instructions
- Heat the oil over high heat in a large sauté pan.
- Add the bell pepper, onion, and garlic and sauté the vegetables 5 minutes or until tender.
- Add the potatoes, beef tips with gravy, beef broth, and pepper.
- Cover and simmer 5 minutes or until the potatoes and beef are hot.
