Ingredients

  • 1 lb 450 g boneless lamb sirloin steaks
  • ½ onion
  • 4 slices ginger
  • 5 cloves garlic
  • 1 tsp garam masala
  • 1 tsp fennel seeds
  • 1 tsp cinnamon
  • ½ tsp cardamom
  • ½ – 1 tsp cayenne pepper
  • 1 tsp salt

Instructions

  • In a blender or food processor, add all ingredients except the lamb steaks.
  • Blend until the onion is finely minced and the spices are well combined (about 3-4 minutes).
  • Place the lamb steaks in a large bowl.
  • Use a knife to make shallow slashes in the meat and fat to help the marinade penetrate.
  • Rub the blended spice mixture over the lamb, ensuring even coverage.
  • Let the meat marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  • Preheat the air fryer to 200°C (400°F) for 5 minutes.
  • Place the lamb steaks in a single layer in the air fryer basket.
  • Cook for 15 minutes, flipping halfway through.
  • Use a meat thermometer to check the internal temperature—150°F (65°C) for medium-well.
  • Remove from the air fryer and let the steaks rest for a few minutes before serving.
