Notes & Wine Advice
Serving Suggestions
Serve the broccoli immediately while the edges are still lightly crisp and charred. It works particularly well alongside steamed rice, noodles, tofu, chicken or other Chinese-inspired dishes. For a larger vegetable spread, explore our Vegetables recipes and Side Dish recipes.Recipe Notes
Cut the broccoli into similarly sized florets so they cook evenly. Keep enough space between the florets for the circulating hot air to reach them. Sichuan peppercorns provide their characteristic citrusy aroma and tingling sensation, so they give a more authentic flavour than ordinary black pepper.Variations
Add sliced spring onion after cooking for freshness or sprinkle the finished broccoli with sesame seeds for extra texture. For additional heat, add a little more chilli oil. For a milder version, reduce the chilli oil and replace part of it with a neutral vegetable oil.Storage and Reheating
Store leftover broccoli in an airtight container in the refrigerator for up to 3 days. Reheat it in the air fryer at 350°F (175°C) for approximately 3 to 4 minutes. Microwaving is possible but will produce softer broccoli.Wine Advice
A dry Riesling works particularly well with the chilli, ginger and aromatic Sichuan peppercorns. Its fresh acidity provides contrast to the chilli oil without overwhelming the vegetables. A crisp Pinot Grigio is another good option when you prefer a lighter, more neutral wine. Explore suitable wines at René’s Wijnbeleving.Nutrition values

About Sichuan Chilli Garlic Broccoli
Sichuan Chilli Garlic Broccoli turns a simple vegetable into a fragrant and spicy side dish using just a handful of ingredients. Fresh broccoli is coated with chilli oil, Sichuan peppercorns, garlic and ginger before being cooked quickly in the air fryer. The intense circulating heat browns the exposed edges of the florets while leaving the thicker stems pleasantly firm. The result is considerably more interesting than simply boiling or steaming broccoli.
The Character of Sichuan Flavours
The defining ingredient in this recipe is Sichuan pepper. Despite its name, Sichuan peppercorn is not closely related to ordinary black pepper or chilli peppers. Its distinctive character is aromatic, citrusy and slightly floral, accompanied by the familiar tingling sensation associated with Sichuan cooking.
Combined with hot chilli oil, it creates a lively contrast between heat and fragrance. Fresh ginger contributes warmth and freshness, while garlic gives the broccoli a deeper savoury flavour. Together these ingredients place the dish firmly within a Chinese-inspired flavour profile. Why Broccoli Works in the Air Fryer
Broccoli is particularly suitable for air frying because its irregular surface provides plenty of edges that can brown. The small flower buds become slightly crisp while the stalks retain moisture and texture. This combination produces a vegetable that tastes roasted without requiring a conventional oven.
The chilli oil serves two purposes. It carries the flavour of the spices across the broccoli and also helps the surface brown during cooking. Only a relatively small amount is required because the air fryer circulates intense heat directly around the florets.
For more recipes using this appliance, visit our Airfryer recipes collection. The method is especially useful when preparing a small quantity of vegetables without heating a full-sized oven.
Getting the Best Texture
Try to use broccoli florets of approximately equal size. Very small pieces can become dark before large stalks are tender. After coating the broccoli with the seasonings, arrange it loosely in the basket rather than compressing everything into a dense layer.
Shaking the basket halfway through cooking exposes different surfaces to the circulating heat. After approximately 10 minutes, the broccoli should be tender enough to eat comfortably while still retaining some bite. Darkened tips are desirable because they contribute a slightly roasted flavour, but the broccoli should not become uniformly brown or dry.
Serving Ideas
This spicy broccoli can be served as a Side Dish with rice, noodles, tofu, grilled chicken or other vegetables. It can also form part of a selection of smaller dishes or be served as a warm Appetizer.
For a more substantial plant-based meal, combine it with steamed brown rice and tofu. A cooling cucumber salad provides a useful contrast when the chilli oil is particularly hot. You can also add spring onions after cooking or scatter sesame seeds over the broccoli immediately before serving.
Storage and Food Safety
This broccoli is best eaten immediately because refrigeration gradually softens the lightly crisp edges. Leftovers can nevertheless be refrigerated in a covered container for up to three days. Reheating them briefly in the air fryer gives a better result than microwaving because dry circulating heat helps restore some of the original texture.
Cool leftovers promptly and keep refrigerated until needed. For general guidance about preparing, serving and storing food safely, consult the U.S. Food and Drug Administration food safety guidance.
With fragrant Sichuan peppercorns, fiery chilli oil, fresh ginger and garlic, Sichuan Chilli Garlic Broccoli transforms an everyday vegetable into a quick, colourful dish with plenty of character. It takes only a few minutes to prepare and around 10 minutes to cook, making it equally useful for a quick dinner or as part of a larger Asian-inspired meal.
