Ingredients

Makes 6 servings / Prep: 14 min., Chill: 2 hrs.

  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 2 tablespoons chopped fresh basil
  • 2 teaspoons sugar
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 garlic clove minced
  • 1 6-ounce package fresh baby spinach
  • 1 ripe avocado peeled and cubed
  • ½ cup crumbled feta cheese
  • ½ cup pitted kalamata olives sliced
  • ¼ cup pine nuts toasted

Instructions

  • Combine first 7 ingredients in a jar; cover tightly, and shake vigorously.
  • Chill 2 hours.
  • Combine spinach and remaining 4 ingredients in a large bowl.
  • Add desired amount of dressing, tossing to coat.
  • Serve immediately.
  • Cover and chill remaining dressing.

Use walnuts instead of pine nuts if you would like to cut the cost of this recipe.
