Ingredients

  • 1 pre-made pizza dough or homemade pizza crust
  • ½ cup pizza sauce tomato or garlic-infused oil
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • ½ cup baby spinach or arugula
  • 4 large eggs
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes optional
  • 1 tablespoon olive oil

Instructions

  • Preheat oven to 220°C (425°F).
  • Roll out the pizza dough on a lightly floured surface.
  • Transfer the dough to a baking sheet or pizza stone.
  • Spread pizza sauce evenly over the dough.
  • Sprinkle mozzarella and Parmesan cheese over the sauce.
  • Add spinach or arugula on top.
  • Create four small wells in the cheese and carefully crack an egg into each well.
  • Drizzle olive oil over the pizza and season with salt, black pepper, and red pepper flakes.
  • Bake for 12-15 minutes or until the eggs are set and the crust is golden brown.
  • Remove from oven, let cool slightly, and serve warm.
