Ingredients
For the Szechuan Sauce

- 14 ounces Firm Tofu pressed and cut into cubes
- 2 tablespoons Cornstarch
- 2 tablespoons Vegetable Oil divided
- 1 medium Red Bell Pepper sliced
- 1 medium Zucchini sliced
- 1 large Carrot thinly sliced
- 1 cup Snap Peas trimmed
- 2 cloves Garlic minced
- 1 tablespoon Fresh Ginger grated
- 1 tablespoon Sesame Oil
For the Garnish
- 2 tablespoons Green Onions chopped
- 1 tablespoon Sesame Seeds
Instructions
For the Szechuan Sauce
- Place the tamari, rice vinegar, ground Szechuan peppercorns, chilli paste, hoisin sauce, maple syrup, and water in a small mixing bowl.
- Whisk until thoroughly combined.
- Set the sauce aside.
For the Tofu
- Press the tofu thoroughly to remove excess moisture.
- Cut the tofu into evenly sized cubes.
- Place the tofu cubes on a large plate.
- Sprinkle with the cornstarch.
- Toss gently until every cube is evenly coated.
- Heat 1 tablespoon of vegetable oil in a large wok over medium-high heat.
Add the coated tofu.
- Stir-fry for 7 minutes until crisp and golden on all sides.
- Transfer the tofu to a clean plate.
For the Vegetables
- Add the remaining tablespoon of vegetable oil to the wok.
- Add the bell pepper, zucchini, carrot, and snap peas.
