  • 1/4 c. butter
  • 2 1/2 c. Bisquick
  • 1 tbsp. fresh parsley chopped
  • 1/2 tsp. dried thyme
  • 3 eggs
  • 1/2 tsp. dried basil
  • 1/4 c. milk
  • 1 c. grated cheddar cheese
  • 1 1/2 c. to 2 c. shredded zucchini
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 350°F (175°C).
  • Grease and flour a loaf pan.
  • In a skillet, melt the butter.
  • Add the chopped onions and sauté until tender (about 5-7 minutes).
  • Set aside to cool slightly.
  • In a medium bowl, beat the eggs.
  • Stir in the milk, parsley, thyme, basil, salt, and pepper.
  • Add the Bisquick, grated cheese, shredded zucchini, and the cooled sautéed onions to the egg mixture.
