  • 4 c. zucchini unpeeled and sliced thinly
  • 1/2 c. onions chopped
  • 2 garlic cloves chopped
  • 2 eggs slightly beaten
  • 6 oz. mozzarella cheese grated
  • 1 teaspoon dijon-style mustard
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • 1 tsp. dried parsley
  • Salt and pepper to taste

Instructions

  • Melt the butter in a large skillet over medium heat.
