  • 1 cup cream of celery soup
  • 1 13.5-ounce can coconut milk, unsweetened
  • 2 tablespoons tamari sauce
  • 1 teaspoon yellow mustard
  • 1 tablespoon honey
  • Salt and freshly ground white pepper to taste
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon chili powder
  • 1 teaspoon curry powder
  • 2 pounds pork tenderloin cut into bite-sized cubes
  • 4 ounces bacon cut into pieces
  • 12 bamboo skewers soaked in water

Instructions

Prepare the Marinade

  • In a large pot, combine the cream of celery soup, coconut milk, tamari sauce, mustard, honey, salt, white pepper, cayenne, chili powder, and curry powder.
  • Bring to a boil, then reduce the heat and simmer for 13 minutes.

Marinate the Pork

  • Add the pork cubes to the pot and gently stir to coat.
  • Refrigerate for 2 hours to allow the flavors to meld.

Assemble the Skewers

  • Thread the marinated pork cubes onto the soaked bamboo skewers, alternating with pieces of bacon.

Cook the Skewers

  • Preheat the air fryer to 370°F (185°C).
  • Place the skewers in the air fryer basket and cook for 15 minutes, turning a couple of times for even cooking.

Serve

  • Serve the skewers warm and enjoy.
