  • 4 cups fresh spinach leaves washed and dried
  • 1/4 red onion thinly sliced into rings
  • 2 tangerines peeled and segmented

Mom’s Spinach Salad Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions

  • In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey or maple syrup, salt, and pepper to make Mom’s Spinach Salad Dressing.
  • Set aside.
  • Divide the spinach leaves between two serving plates, arranging them in an even layer.
  • Top the spinach leaves with the sliced red onion rings and tangerine segments.
  • Just before serving, drizzle the Mom’s Spinach Salad Dressing lightly over the salads.
