  • 2 tablespoons olive oil
  • 4 eggs
  • 2 tablespoons scallions chopped
  • 4 tablespoons ricotta cheese
  • 1/4 teaspoon freshly cracked black pepper
  • Salt to taste
  • 6 ounces prosciutto chopped
  • 1 tablespoon Italian parsley roughly chopped

Instructions

  • Generously grease a baking pan with olive oil.
  • Whisk the eggs in a mixing bowl and add the chopped scallions, ricotta cheese, black pepper, and salt.
  • Fold in the chopped prosciutto and mix until well combined.
  • Spoon the egg mixture into the prepared baking pan, spreading it evenly.
  • Preheat the air fryer to 360°F (182°C).
  • Place the baking pan in the air fryer and cook for 6 minutes or until the omelet is set and slightly golden.
  • Remove the omelet from the air fryer and garnish with freshly chopped Italian parsley.
  • Serve immediately.
