Instructions
Generously grease a baking pan with olive oil.
Whisk the eggs in a mixing bowl and add the chopped scallions, ricotta cheese, black pepper, and salt.
Fold in the chopped prosciutto and mix until well combined.
Spoon the egg mixture into the prepared baking pan, spreading it evenly.
Preheat the air fryer to 360°F (182°C).
Place the baking pan in the air fryer and cook for 6 minutes or until the omelet is set and slightly golden.
Remove the omelet from the air fryer and garnish with freshly chopped Italian parsley.
Serve immediately.
