Chocolate Zucchini Bread
Ingredients
- 3 eggs beaten
- 1 cup cooking oil
- 1¾ cups sugar
- 1 T. vanilla
- 2 cups grated zucchini
- 3 cups all-purpose flour or use half whole wheat and half all-purpose
- 1 tsp. salt
- 1 tsp. baking soda
- 1 tsp. baking powder
- ½ cup unsweetened cocoa
- ½ cup chopped walnuts or pecans optional
Instructions
- Preheat the oven to 350°.
- In a large bowl, mix together the eggs, oil, sugar, and vanilla.
- Add the zucchini and stir.
- In a separate bowl, mix together the flour, salt, baking soda, baking powder, and cocoa.
- Add the flour mixture to the zucchini mixture and blend well.
- Add the nuts, if using, and stir again.
- Grease and flour 2 loaf pans.
- Pour in the batter.
- Bake for 45 minutes.
- Cool the bread in the pans for 10 to 15 minutes.
- Remove the loaves to a wire rack to finish cooling.
