Chocolate Zucchini Bread

Ingredients

grated zucchini

all-purpose flour
or use half whole wheat and half all-purpose

salt
▢

baking soda
▢

tsp.
baking powder
▢

cup
unsweetened cocoa
▢
½
cup
chopped walnuts or pecans
optional
Instructions
Preheat the oven to 350°.
In a large bowl, mix together the eggs, oil, sugar, and vanilla.
Add the zucchini and stir.
In a separate bowl, mix together the flour, salt, baking soda, baking powder, and cocoa.
Add the flour mixture to the zucchini mixture and blend well.
Add the nuts, if using, and stir again.
Grease and flour 2 loaf pans.
Pour in the batter.
Bake for 45 minutes.
Cool the bread in the pans for 10 to 15 minutes.
Remove the loaves to a wire rack to finish cooling.
