Roasted to perfection, these lima beans are paired with sweet caramelized onions and a touch of balsamic vinegar, creating a delicious and easy side dish.

Ingredients
- 1 pound 455 g lima beans, fresh, frozen, or canned
- 1 red onion sliced into julienne
- 2 tablespoons 30 g minced garlic
- 2 tablespoons 30 ml extra-virgin olive oil
- 2 tablespoons 30 ml balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (180°C, or gas mark 4).
- Line a baking sheet with aluminum foil.
- In a bowl, toss together all the ingredients to coat.
- Spread the mixture evenly on the baking sheet.
- Bake for 20 to 25 minutes, or until the lima beans are tender and the onions are translucent and beginning to brown.
