Ingredients
- 1/4 cup almond flour
- 1/4 cup coconut flour
- 1/2 cup erythritol sweetener
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 1/2 cup fresh strawberries hulled and finely chopped
- 1/4 teaspoon vanilla extract
- 2 1/4 tablespoons butter melted
- 2 large eggs
- 3/4 tablespoon fresh basil chopped
- Olive oil for greasing
Instructions
- Preheat the air fryer to 190°C for 3 minutes.
- Combine the almond flour, coconut flour, erythritol, baking powder, and salt in a large bowl.
- Combine the strawberries, vanilla extract, melted butter, and eggs in a medium bowl.
- Pour the wet ingredients into the dry ingredients.
- Mix gently until just combined.
- Fold the chopped basil into the batter without overmixing.
- Lightly grease 6 silicone cupcake liners with olive oil.
- Divide the batter evenly between the cupcake liners.
- Place the liners in the air fryer basket.
- Air fry for 7 minutes until the muffins are set and lightly golden.
- Transfer the muffins in their liners to a cooling rack.
- Allow to cool for 5 minutes before serving.
