Ingredients

Makes 4 servings

  • 3 cups diced Basic Cooked Turkey Breast
  • ½ cup Chipotle Mayonnaise or Crema
  • 1 large avocado Hass variety preferred, peeled and diced
  • ½ medium cucumber peeled, seeded, and thinly sliced
  • 1 cup diced jicama
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon fresh lime juice
  • 3 ripe medium tomatoes cut into wedges
  • cups shredded lettuce such as iceberg or romaine

Instructions

  • Prepare the turkey breast, then put it in a large bowl.
  • Prepare the mayonnaise.
  • Mix the remaining salad ingredients, except the tomatoes and lettuce, with the turkey.
  • Add the dressing and toss to coat.
  • Arrange a layer of shredded lettuce on a serving platter.
  • Mound the salad on the lettuce and surround with tomato wedges.
