Turkey Salad with Chipotle Mayonnaise

There are so many wonderful dishes to make with Mexico's large native bird. Here is a contemporary turkey salad to serve as a light meal or as part of a buffet.

Ingredients
Makes 4 servings

diced Basic Cooked Turkey Breast
▢

cup
Chipotle Mayonnaise or Crema
▢
1
large
avocado
Hass variety preferred, peeled and diced
▢
½
medium
cucumber
peeled, seeded, and thinly sliced
▢
1
cup
diced jicama
▢
2
tablespoons
chopped fresh cilantro
▢
1
teaspoon
fresh lime juice
▢
3
ripe medium tomatoes cut into wedges
▢
2½
cups
shredded lettuce
such as iceberg or romaine
Instructions
Prepare the turkey breast, then put it in a large bowl.
Prepare the mayonnaise.
Mix the remaining salad ingredients, except the tomatoes and lettuce, with the turkey.
Add the dressing and toss to coat.
Arrange a layer of shredded lettuce on a serving platter.
Mound the salad on the lettuce and surround with tomato wedges.
