Ingredients

  • 1 cup wheat berries uncooked
  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 can 14.5 oz diced tomatoes
  • 1 onion diced
  • 2 carrots peeled and sliced
  • 3 garlic cloves minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon ground cumin
  • 1/4 cup olive oil
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Instructions

  • In a large skillet, heat olive oil over medium heat and sauté onions, carrots, and garlic until softened, about 5 minutes.
  • Add the sautéed vegetables to the crockpot.
  • Add wheat berries, chickpeas, diced tomatoes, vegetable broth, oregano, basil, cumin, salt, and pepper to the crockpot.
  • Stir to combine the ingredients.
  • Cover and cook on low for 6 hours, or until the wheat berries are tender.
  • Once cooked, taste and adjust seasoning if necessary.
  • Garnish with fresh parsley before serving, if desired.
