Notes & Wine Advice
Serving Suggestions
Serve the shoestring fries immediately as a snack or side dish. They pair well with burgers, grilled vegetables, sandwiches or a selection of dipping sauces.Recipe Notes
Rinsing removes excess surface starch, while drying the potatoes thoroughly helps them become crisp. Do not overcrowd the air fryer basket. Cook the fries in batches when they cannot be arranged loosely.Variations
For classic French fries, cut the potatoes into sticks approximately 1.25 cm thick. Air-fry them at 190°C for about 25 minutes, shaking the basket every 5 to 7 minutes. The rosemary and garlic can be omitted for a plain version.Storage
These fries are best served immediately. Refrigerate leftovers in a covered container for up to two days. Reheat them in the air fryer at 190°C for 3 to 5 minutes to restore some of their crispness.Wine Advice
A crisp Sauvignon Blanc complements the rosemary and garlic while cutting through the richness of the fries. A dry Pinot Grigio is another suitable choice.Nutrition values
————————————————————————————————–
Garlic rosemary fries are thin, golden potato matchsticks cooked in the air fryer with fresh rosemary and sliced garlic. Their narrow shape creates plenty of crisp edges, while the inside remains light and tender. They need only a small amount of vegetable oil, making them less greasy than traditionally deep-fried potatoes.
Why Russet Potatoes Work Well
Russet potatoes contain plenty of starch and relatively little moisture. This combination helps the exterior become crisp while keeping the centre fluffy. Cut the potatoes into evenly sized matchsticks so that they cook at approximately the same rate. Fries that differ greatly in thickness can leave you with a mixture of burnt and undercooked pieces.
You can leave the skin on after scrubbing the potatoes thoroughly. The skin adds flavour, texture and a pleasantly rustic appearance. A sharp kitchen knife or julienne cutter makes it easier to create thin, consistent strips.
Rinsing and Drying
Rinsing the cut potatoes under cold running water removes excess surface starch. Continue rinsing until the water runs clear. This step helps prevent the fries from sticking together and improves their final texture.
Drying is equally important. Spread the potatoes over a double layer of paper towels and pat them completely dry. Water left on the surface creates steam inside the air fryer, which can make the potatoes soft instead of crisp.
Garlic Rosemary Fries in the Air Fryer
Toss the dry potatoes with vegetable oil, rosemary, kosher salt and black pepper. The thin coating of oil helps the seasoning adhere and promotes even browning. Arrange the potatoes loosely inside the basket and divide them into batches when necessary.
Shake the basket every five minutes to separate the potatoes and expose different sides to the circulating heat. Add the sliced garlic during the final five minutes. Garlic cooks faster than potatoes and can become bitter when added at the beginning. More recipes using this convenient method are available in the air-fryer collection.
Serving Ideas
Serve these crispy shoestring potatoes as soon as they leave the air fryer. Finish them with flaky sea salt and pile them onto a large plate for sharing. They work especially well with burgers, grilled vegetables, sandwiches and plant-based mains.
Ketchup, garlic mayonnaise, mustard sauce or a fresh herb dip can be served alongside them. You can find additional accompaniments in the dip recipe collection. For parties or game days, prepare several batches and keep the finished fries briefly in a low oven until everything is ready.
Easy Variations
Replace the rosemary with thyme, oregano or finely chopped sage. Smoked paprika provides a warmer flavour, while cayenne pepper creates a spicy version. Parmesan can be sprinkled over the hot fries for a savoury finish, although this changes the recipe from vegan to vegetarian.
For traditional French fries, cut the potatoes into sticks approximately 1.25 cm thick. Cook them at 190°C for around 25 minutes and shake the basket regularly. Browse the potato recipes for more ways to prepare this versatile ingredient.
Storage and Safe Handling
The fries taste best immediately because thin potatoes soften as they cool. Refrigerate leftovers in a covered container for no longer than two days. Reheat them at 190°C in the air fryer for three to five minutes. Avoid using a microwave because it makes the fries soft.
Wash potatoes carefully, use clean utensils and refrigerate leftovers promptly. Consult the FDA safe food handling guidance for additional information about preparing and storing food safely.
With their crisp texture, aromatic herbs and gently toasted garlic, garlic rosemary fries provide an easy homemade alternative to packaged potato sticks or deep-fried snacks.
