Cut the potatoes into thin, evenly sized matchsticks.
Place the potatoes in a large colander.
Rinse them under cold running water until the water runs clear.
Spread the potatoes over a double layer of paper towels.
Pat them completely dry to remove as much moisture as possible.
Combine the potatoes, vegetable oil and rosemary in a large mixing bowl.
Season with kosher salt and freshly ground black pepper.
Toss until the potatoes are evenly coated.
Arrange the potatoes loosely in the air fryer basket and cook in batches when necessary.
Air-fry at 200°C for approximately 18 minutes.
Shake the basket every 5 minutes so the fries cook evenly.
Add the sliced garlic during the final 5 minutes.
Continue cooking until the fries are golden brown and crisp.
Transfer the fries to a serving plate.
Sprinkle with flaky sea salt while still hot.
Serve immediately.

Variations

Storage
These fries are best served immediately. Refrigerate leftovers in a covered container for up to two days. Reheat them in the air fryer at 190°C for 3 to 5 minutes to restore some of their crispness.

A crisp Sauvignon Blanc complements the rosemary and garlic while cutting through the richness of the fries. A dry Pinot Grigio is another suitable choice.
