  • 250 g cheddar cheese grated
  • 2 tomatoes medium and finely chopped
  • 150 g chorizo finely chopped
  • ยฝ bunch fresh parsley finely chopped
  • 1 red chilli long and finely chopped, deseeded if preferred
  • 8 green onions finely sliced
  • 1 lime juiced
  • 8 flour tortillas large
  • Lime wedges to serve

Instructions

  • Preheat the air fryer to 180ยฐC.
  • Combine the cheddar cheese, tomatoes, chorizo, parsley, red chilli, green onions and lime juice in a large bowl.
  • Spoon the filling over one half of each tortilla, then fold the other half over to enclose the filling. Press firmly so the filling reaches the edges without spilling out.
  • Arrange the quesadillas in the air fryer basket, overlapping slightly if necessary.
  • Place a heatproof utensil on top to prevent the tortillas from opening during cooking.
  • Cook for about 10 minutes, turning after 5 minutes, until golden and crisp around the edges.
  • Serve immediately with lime wedges on the side.
