Instructions
Preheat the air fryer to 180°C.
Combine the cheddar cheese, tomatoes, chorizo, parsley, red chilli, green onions and lime juice in a large bowl.
Spoon the filling over one half of each tortilla, then fold the other half over to enclose the filling. Press firmly so the filling reaches the edges without spilling out.
Arrange the quesadillas in the air fryer basket, overlapping slightly if necessary.
Place a heatproof utensil on top to prevent the tortillas from opening during cooking.
Cook for about 10 minutes, turning after 5 minutes, until golden and crisp around the edges.
Serve immediately with lime wedges on the side.
