A commonly used recipe that measures the beating time—by hand—required for the icing to reach proper consistency. Icing for a layer cake

Ingredients

  • 2 egg whites unbeaten
  • cups granulated sugar
  • 5 Tbsp. cold water
  • 1 tsp. light corn syrup
  • 1 tsp. vanilla

Instructions

  • Mix together egg whites, sugar, water, and corn syrup in top section of double boiler.
  • Place over rapidly boiling water and beat continuously with a rotary beater for 7 minutes.
  • Remove from heat.
  • Stir in vanilla and continue beating until icing is able to be spread.
