Salsa Vinaigrette

Name: Salsa Vinaigrette
Ingredients: 1 large vine-ripened tomato (peeled, seeded, and chopped); 2 tablespoons chopped white onion; 1 serrano chile chopped with seeds; 2 tablespoons fresh lime juice; 1 tablespoon chopped fresh cilantro; ¼ teaspoon salt (or to taste); ¼ cup olive oil or vegetable oil

Vinaigrette madewith the ingredients typical to a salsa makes a lively dressing. Try it withtossed greens or even with one of my favorites, Mushroom and Avocado Salad.

Ingredients

Makes about 1 cup

▢ 1 large vine-ripened tomato peeled, seeded, and chopped
▢ 2 tablespoons chopped white onion
▢ 1 serrano chile chopped with seeds
▢ 2 tablespoons fresh lime juice
▢ 1 tablespoon chopped fresh cilantro
▢ ¼ teaspoon salt or to taste
▢ ¼ cup olive oil or vegetable oil

Instructions

Put all of the ingredients, except the oil, in a blender.
Blend until smooth.
With the motor running, pour the oil through the lid opening and blend until emulsified.
Adjust salt.
Transfer to a jar.
Cover and refrigerate up to 2 days.
