Salsa Vinaigrette

Vinagreta de Salsa
Vinaigrette madewith the ingredients typical to a salsa makes a lively dressing. Try it withtossed greens or even with one of my favorites, Mushroom and Avocado Salad.

Ingredients

Makes about 1 cup

  • 1 large vine-ripened tomato peeled, seeded, and chopped
  • 2 tablespoons chopped white onion
  • 1 serrano chile chopped with seeds
  • 2 tablespoons fresh lime juice
  • 1 tablespoon chopped fresh cilantro
  • ¼ teaspoon salt or to taste
  • ¼ cup olive oil or vegetable oil

Instructions

  • Put all of the ingredients, except the oil, in a blender.
  • Blend until smooth.
  • With the motor running, pour the oil through the lid opening and blend until emulsified.
  • Adjust salt.
  • Transfer to a jar.
  • Cover and refrigerate up to 2 days.
