Ingredients
Makes about 1 cup

large
vine-ripened tomato
peeled, seeded, and chopped
▢

tablespoons
chopped white onion
▢
1
serrano chile chopped with seeds
▢
2
tablespoons
fresh lime juice
▢
1
tablespoon
chopped fresh cilantro
▢
¼
teaspoon
salt
or to taste
▢
¼
cup
olive oil or vegetable oil
Instructions
Put all of the ingredients, except the oil, in a blender.
Blend until smooth.
With the motor running, pour the oil through the lid opening and blend until emulsified.
Adjust salt.
Transfer to a jar.
Cover and refrigerate up to 2 days.
