Pumpkin Cookies from Deb Stanley

Ingredients

  • 2 cups sugar
  • 4 cups flour
  • 1 cup shortening
  • 2 teaspoons cinnamon
  • 2 eggs
  • 2 teaspoons vanilla
  • 15 oz. pumpkin
  • 2 teaspoons baking powder
  • 2 cups raisins
  • 2 teaspoons baking soda

Frosting:

  • 8 oz. cream cheese
  • ¾ stick butter
  • 1 tablespoon milk
  • 1 teaspoon vanilla
  • 4 cups powdered sugar.

Instructions

  • Cream sugar, shortening, and all other ingredients, flour and raisins last.
  • Bake at 375º for 6-8
  • minutes.
