Grilled Avocado-Cheese Sandwiches
Ingredients
Makes 4 servings / Prep: 15 min., Cook: 6 min.
- 2 plum tomatoes sliced
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 large avocado cut into 8 slices
- 1 tablespoon rice vinegar*
- ¼ cup butter softened
- 2 tablespoons shredded Parmesan cheese
- 8 whole-grain bread slices
- 4 1-ounce Muenster cheese slices
- 8 bacon slices cooked
- 4 1-ounce sharp Cheddar cheese slices
- 4 1-ounce Monterey Jack cheese slices
Instructions
- Sprinkle tomato slices evenly with salt and pepper; sprinkle avocado slices with rice vinegar.
- Set aside.
- Stir together butter and Parmesan cheese.
- Spread on 1 side of each bread slice.
- Place 4 bread slices, buttered side down, on wax paper.
- Top evenly with Muenster cheese, bacon, avocado, Cheddar cheese, tomato, and Monterey Jack cheese; top with remaining bread slices, buttered side up.
- Cook sandwiches in a large nonstick skillet or griddle over medium heat 2 to 3 minutes on each side or until golden brown and cheeses are melted.

½ cup guacamole may be substituted for avocado and rice vinegar.
