Champiñones a la Segoviana
Ingredients
- ¼ cup small cubes ¼ inch slab bacon
- 1 garlic clove finely chopped
- 1 tablespoon finely chopped fresh flat-leaf parsley
- ½ pound mushrooms rinsed, trimmed, and halved or quartered
- ¼ cup dry white wine
- Salt to taste
- Freshly ground black pepper to taste
Instructions
- In a medium skillet, heat the bacon over medium heat.
- Cook, stirring, until it begins to brown.
- Add the finely chopped garlic, parsley, and mushrooms to the skillet.
- Cook, stirring, for about 2 minutes.
- Stir in the dry white wine, salt, and freshly ground black pepper.
- Increase the heat to high and cook, stirring occasionally, until the liquid evaporates.
