Ingredients

  • ¼ cup small cubes ¼ inch slab bacon
  • 1 garlic clove finely chopped
  • 1 tablespoon finely chopped fresh flat-leaf parsley
  • ½ pound mushrooms rinsed, trimmed, and halved or quartered
  • ¼ cup dry white wine
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  • In a medium skillet, heat the bacon over medium heat.
  • Cook, stirring, until it begins to brown.
  • Add the finely chopped garlic, parsley, and mushrooms to the skillet.
  • Cook, stirring, for about 2 minutes.
  • Stir in the dry white wine, salt, and freshly ground black pepper.
  • Increase the heat to high and cook, stirring occasionally, until the liquid evaporates.
