Ingredients
- 2- oz. package couscous uncooked
- 2 cups cooked chicken diced
- 1 zucchini chopped
- 1 stalk celery thinly sliced
- 1 carrot peeled and grated
- 2 cups orange juice
- 1/4 cup fresh basil chopped
- 2 green onions finely chopped
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- In a large serving bowl, combine the uncooked couscous, diced chicken, zucchini, celery, and grated carrot.
- Set aside.
- In a saucepan over medium heat, bring the orange juice to a boil.
- Stir the hot orange juice into the couscous mixture.
- Cover the bowl tightly with plastic wrap and let it stand for 5 minutes.
- After 5 minutes, remove the plastic wrap and sprinkle the mixture with chopped fresh basil, finely chopped green onions, salt, and pepper.
- Gently stir the ingredients until evenly mixed.
