Speedy One-Pot Chicken and Vegetable Couscous

Ingredients

peeled and grated

orange juice

fresh basil

finely chopped

Instructions
In a large serving bowl, combine the uncooked couscous, diced chicken, zucchini, celery, and grated carrot.
Set aside.
In a saucepan over medium heat, bring the orange juice to a boil.
Stir the hot orange juice into the couscous mixture.
Cover the bowl tightly with plastic wrap and let it stand for 5 minutes.
After 5 minutes, remove the plastic wrap and sprinkle the mixture with chopped fresh basil, finely chopped green onions, salt, and pepper.
Gently stir the ingredients until evenly mixed.
