Ingredients

  • ¾ cup water
  • 1 cup champagne vinegar
  • teaspoon kosher salt
  • 2 teaspoons sugar
  • 2 bay leaves
  • 1 teaspoon whole black peppercorns
  • 2 large red onions sliced into ¼-inch rounds

Instructions

  • In a 2-quart nonreactive pot, combine water, champagne vinegar, salt, sugar, bay leaves, and black peppercorns.
  • Bring to a simmer over medium heat, stirring until salt and sugar dissolve.
  • Remove from heat and add sliced onions.
  • Let cool completely, then pack into a glass pint jar and refrigerate until ready to use.
