Ingredients

champagne vinegar

whole black peppercorns

red onions
sliced into ¼-inch rounds
Instructions
In a 2-quart nonreactive pot, combine water, champagne vinegar, salt, sugar, bay leaves, and black peppercorns.
Bring to a simmer over medium heat, stirring until salt and sugar dissolve.
Remove from heat and add sliced onions.
Let cool completely, then pack into a glass pint jar and refrigerate until ready to use.
