Crispy Breakfast Chimichangas

Ingredients
- 2 large flour tortillas 10- to 12-inch, or gluten-free tortillas
- ½ cup refried beans canned, pinto or black
- 4 large eggs scrambled
- 4 corn tortilla chips crushed
- ½ cup pepper jack cheese grated, dairy or non-dairy and optional
- 12 slices pickled jalapeño
- 1 tablespoon vegetable oil or avocado oil
- Guacamole for serving and optional
- Salsa for serving and optional
- Sour cream dairy or non-dairy, for serving and optional
Instructions
- Lay the tortillas on a work surface and divide the refried beans between them, spreading the beans in a rectangle in the centre of each tortilla.
- Divide the scrambled eggs, crushed tortilla chips, pepper jack cheese if using, and pickled jalapeño slices between the tortillas.
- Fold one side of each tortilla over the filling, fold in the short sides, and roll tightly into a burrito.
- Brush the outside of each burrito with vegetable oil or avocado oil.
- Preheat the air fryer to 175°C (350°F).
- Place the burritos seam-side down in the air fryer basket.
- Cook for about 10 minutes, until the tortillas are crisp and golden and the filling is thoroughly heated.
- Transfer to serving plates and serve warm with guacamole, salsa and sour cream if desired.

Building the Filling
