Place the flour tortillas on a clean work surface.
Divide the refried beans evenly among the tortillas.
Spread the beans in a rectangle across the centre of each tortilla while leaving the edges clear.
Divide the scrambled eggs, crushed tortilla chips, pepper jack cheese, and jalapeño slices evenly among the tortillas.
Fold one long side of each tortilla over the filling.
Fold both short sides inward and roll each tortilla tightly into a sealed burrito.
Brush the outside of each burrito lightly with vegetable oil.
Place the burritos seam-side down in the air fryer basket without overcrowding.
Air fry for approximately 10 minutes until the tortillas are golden and crisp and the filling is hot.
Cook the chimichangas in batches when necessary.
Serve immediately with guacamole, salsa, and sour cream if desired.
