Notes & Wine Advice

Serving Suggestions

Serve this frittata with toasted bread, roasted tomatoes, or a crisp green salad. It also pairs well with dishes from our Breakfast Recipes, Brunch Recipes, and Salad Recipes.

Recipe Notes

Cut the squash into even ½-inch cubes so every piece becomes tender at the same time. Check the frittata after 18 minutes because air-fryer models vary. The center should be set without becoming dry. Browse our Air Fryer Recipes for more efficient meals.

Variations

Replace the butternut squash with pumpkin, acorn squash, or sweet potato. When using leftover cooked vegetables, warm them with the sage for only 4 minutes before adding the eggs. Goat cheese or feta can replace the ricotta. Find more ideas in our Cheese Recipes.

Wine Advice

A lightly oaked Chardonnay complements the creamy ricotta and sweet squash. A chilled Pinot Grigio offers a lighter option with enough freshness to balance the eggs.

Air Fryer Squash Frittata

Air fryer squash frittata combines roasted butternut squash, fresh sage, eggs, creamy ricotta, and a restrained pinch of cayenne. The squash is roasted directly in the baking dish before the eggs are added, keeping the method efficient and limiting the amount of equipment required.

Butternut squash and sage form a classic autumn combination. The naturally sweet squash develops caramelized edges in the air fryer, while sage adds an earthy aroma. Ricotta introduces soft, creamy pockets throughout the eggs, and cayenne provides gentle warmth. Browse our Brunch Recipes for more satisfying dishes suitable for relaxed weekends.

Why Butternut Ricotta Frittata Works

Butternut ricotta frittata works particularly well in the air fryer because the squash can be roasted and the eggs cooked in the same dish. Starting at a high temperature encourages browning around the squash without overcooking its center. Lowering the temperature before adding the eggs allows the frittata to set more gently.

Ricotta is added in small dollops rather than mixed completely into the eggs. This creates creamy pockets and prevents the entire mixture from becoming too dense. Sage is placed beneath the squash initially, protecting it from the strongest airflow while allowing its flavor to infuse the olive oil.

Preparing the Squash and Eggs

For the best air fryer squash frittata, cut the butternut squash into even ½-inch cubes. Larger pieces may remain firm when the eggs are ready, while very small pieces can become overly soft. Tossing the squash thoroughly with olive oil helps every surface brown consistently.

Beat the eggs only until the whites and yolks are blended. Excessive whisking introduces too much air and can cause the frittata to rise quickly before collapsing. After pouring the eggs over the squash, distribute the ricotta evenly so each portion receives several creamy pieces. Explore our Air Fryer Recipes for more dishes using controlled circulating heat.

Serving Air Fryer Squash Frittata

Air fryer squash frittata can be served warm for breakfast, brunch, lunch, or a light evening meal. Toasted sourdough, roasted tomatoes, sautéed mushrooms, or a fresh green salad provide suitable accompaniments. The frittata is substantial enough to serve without meat, but it can also accompany grilled sausages or bacon.

Let the cooked frittata rest for five minutes before cutting. Resting allows the eggs to finish setting and makes it easier to remove neat wedges from the baking dish. A few fresh sage leaves or an additional spoonful of ricotta can be added before serving.

Storage and Ingredient Substitutions

Leftover butternut ricotta frittata can be refrigerated in an airtight container for up to three days. Reheat individual wedges in the air fryer at 280°F (140°C) for several minutes. Avoid reheating for too long because the eggs can become rubbery.

Pumpkin, acorn squash, or sweet potato can replace the butternut squash. Leftover cooked squash may also be used. Warm it with the sage for approximately four minutes before pouring in the eggs. Goat cheese, feta, or cottage cheese can replace the ricotta, although each option will produce a different texture.

Follow the FDA food-safety guidance when preparing, storing, and reheating eggs. With caramelized squash, earthy sage, and creamy cheese, air fryer squash frittata is a dependable autumn meal for breakfast, brunch, or dinner.
