Notes & Wine Advice

Serving Suggestions

Serve these eggs immediately with toasted sourdough, ciabatta, or another bread from our Bread Recipes. Roasted tomatoes, grilled mushrooms, or a fresh salad can turn them into a larger meal. Browse our Breakfast Recipes and Brunch Recipes for additional ideas.

Recipe Notes

Keep the pesto mainly over the egg whites so the yolks remain visible. Air-fryer models differ, so begin checking the eggs after 10 minutes. The whites should be completely set, while the yolks can remain soft if preferred. Discover more efficient meals in our Air Fryer Recipes.

Variations

Replace the homemade kale pesto with 1½ cups prepared pesto. Spinach can replace the kale, while walnuts, pine nuts, or cashews can replace the almonds. Parmesan may be substituted for Pecorino. For more homemade accompaniments, browse our Sauce Recipes.

Wine Advice

A chilled Prosecco provides refreshing acidity that balances the eggs, cheese, and olive oil. A crisp Sauvignon Blanc also complements the kale and savory olives.

Air Fryer Pesto Eggs

Air fryer pesto eggs combine gently baked eggs with homemade kale-almond pesto, Pecorino cheese, heavy cream, and mixed olives. Cooking everything in one air-fryer-safe dish makes the recipe convenient for serving four people without preparing individual fried or scrambled eggs.

The homemade pesto adds leafy greens, almonds, garlic, cheese, and olive oil to a familiar breakfast ingredient. Pecorino and olives provide a savory, salty finish, while cream softens the pesto and enriches the eggs. Served with toast, the dish makes a complete breakfast or relaxed weekend brunch. Why Kale Pesto Baked Eggs Work

Kale pesto baked eggs work particularly well in the air fryer because the circulating heat cooks the eggs evenly at a relatively low temperature. The pesto covers and flavors the whites, while leaving the yolks exposed makes it easier to monitor their consistency during cooking.

The heavy cream is drizzled mainly over the yolks and gently swirled into the pesto. This prevents the topping from becoming dry and creates a softer contrast with the cooked egg whites. Since air fryers and baking dishes conduct heat differently, checking the eggs a few minutes before the suggested cooking time helps prevent overcooked yolks.

Preparing Smooth Kale-Almond Pesto

For the best air fryer pesto eggs, remove the tough stems and center ribs from the kale. These fibrous parts are difficult to blend smoothly and can produce a coarse pesto. Roughly chopping the leaves before blending helps them combine more evenly with the remaining ingredients.

Add the olive oil, grated Pecorino, almonds, garlic, salt, and black pepper to the blender with the kale. Stop occasionally and scrape down the sides. The finished pesto does not need to be completely liquid, but it should be smooth enough to spoon easily around the eggs. More homemade accompaniments can be found in our Sauce Recipes.

Serving Air Fryer Pesto Eggs

Air fryer pesto eggs are best served immediately while the whites are set and the yolks remain warm. Toasted sourdough, ciabatta, or whole-grain bread provides a crisp surface for collecting the soft eggs and pesto. The chopped olives should be added after cooking so their flavor and texture remain noticeable.

For a more substantial brunch, add roasted tomatoes, grilled mushrooms, sautéed spinach, or a fresh green salad. Roasted potatoes or white beans can transform the recipe into a satisfying lunch. Browse our Brunch Recipes and Salad Recipes for suitable side dishes.

Storage and Easy Substitutions

Leftover kale pesto baked eggs can be refrigerated in an airtight container for up to two days. Reheat them gently in the air fryer at 280°F (140°C), although the yolks will become firmer. The homemade pesto can be prepared separately and refrigerated for up to three days before use.

When time is limited, replace the homemade mixture with 1½ cups store-bought or homemade pesto. Spinach can replace the kale, while walnuts, pine nuts, or cashews can replace the almonds. Parmesan is a suitable alternative to Pecorino when a milder cheese is preferred.

Follow the FDA food-safety guidance when preparing and storing eggs. With creamy yolks, savory olives, and vibrant homemade pesto, air fryer pesto eggs make an impressive but manageable breakfast or brunch.
