Air fryer pesto eggs combine gently baked eggs with homemade kale-almond pesto, Pecorino cheese, cream, and mixed olives. Served with toast, they make a flavorful Italian-inspired breakfast or brunch for four.
Preheat the air fryer to 300°F (150°C) for 3 minutes.
Add the kale, olive oil, Pecorino cheese, almonds, garlic, salt, and black pepper to a blender.
Blend until the kale pesto is smooth while scraping down the sides when necessary.
Lightly grease an 8-inch round baking dish that fits inside the air fryer.
Crack the eggs carefully into the baking dish while keeping the yolks intact.
Spoon the kale pesto over the egg whites while leaving the yolks exposed.
Drizzle the heavy cream over the egg yolks.
Gently swirl a small amount of the cream into the pesto.
Place the baking dish in the air fryer basket.
Air fry at 300°F (150°C) for 12–15 minutes until the whites are set and the yolks reach the desired consistency.
Sprinkle the chopped olives over the eggs.
Serve immediately with toast.

Serving Suggestions
Serve these eggs immediately with toasted sourdough, ciabatta, or another bread from our Bread Recipes. Roasted tomatoes, grilled mushrooms, or a fresh salad can turn them into a larger meal. Browse our Breakfast Recipes and Brunch Recipes for additional ideas.
Recipe Notes
Keep the pesto mainly over the egg whites so the yolks remain visible. Air-fryer models differ, so begin checking the eggs after 10 minutes. The whites should be completely set, while the yolks can remain soft if preferred. Discover more efficient meals in our Air Fryer Recipes.
Variations
Replace the homemade kale pesto with 1½ cups prepared pesto. Spinach can replace the kale, while walnuts, pine nuts, or cashews can replace the almonds. Parmesan may be substituted for Pecorino. For more homemade accompaniments, browse our Sauce Recipes.
Wine Advice
A chilled Prosecco provides refreshing acidity that balances the eggs, cheese, and olive oil. A crisp Sauvignon Blanc also complements the kale and savory olives.
