Air Fryer Summer Frittata
Air fryer summer frittata combines juicy cherry tomatoes, sweet corn, fresh dill, eggs, milk, and melted Monterey Jack cheese. A creamy avocado dressing made with lime, olive oil, basil, and scallion adds a bright finish that suits warm-weather breakfasts and brunches.
Cooking the frittata in the air fryer avoids heating the entire kitchen during summer. The gentle initial temperature allows the eggs to set evenly, while a slightly higher final temperature melts the cheese. Serve it with our Elote Corn and Cilantro Salad when you want a larger summer meal.
Why Tomato Corn Frittata Works
Tomato corn frittata balances sweet vegetables, creamy eggs, melted cheese, and fresh herbs. Cherry tomatoes contribute acidity, while corn provides sweetness and a gentle bite. Monterey Jack melts smoothly without overpowering the vegetables, and dill adds a clean herbal flavor.
Salting the tomatoes before cooking is an essential step. Salt draws out some of their excess moisture and concentrates their flavor. Draining that liquid prevents the egg mixture from becoming watery and helps the frittata develop a firmer texture that can be cut into neat wedges.
Preparing the Eggs and Dressing
For the best air fryer summer frittata, beat the eggs only until the whites and yolks are combined. Excessive whisking introduces too much air and can make the frittata rise quickly before collapsing. Mix the vegetables through gently so they remain evenly distributed.
The avocado dressing can be prepared while the eggs cook. Mash the avocado thoroughly with fresh lime juice before stirring in the olive oil. This order creates a smoother texture and helps prevent discoloration. Add the basil and scallion last so their fresh flavor remains noticeable. Serving Air Fryer Summer Frittata
Air fryer summer frittata is suitable for breakfast, brunch, lunch, or a light family dinner. Serve each wedge with a spoonful of avocado dressing. Toasted sourdough, roasted potatoes, or a crisp salad can make the meal more substantial.
The frittata is best served warm rather than extremely hot, allowing the tomato, corn, dill, and cheese flavors to remain distinct. Let it rest for five minutes after cooking so the eggs finish setting. Browse our Salad Recipes for fresh side dishes that suit the avocado dressing.
Storage and Ingredient Variations
Leftover tomato corn frittata can be refrigerated in an airtight container for up to three days. Store the avocado dressing separately and use it within one day. Reheat individual frittata wedges in the air fryer at 280°F (140°C) until warmed through.
Air-fried corn can replace fresh or frozen kernels for a lightly roasted flavor. Cheddar, feta, mozzarella, or Pepper Jack can replace Monterey Jack. Add jalapeño, roasted bell pepper, zucchini, or spinach for variation. Parsley or cilantro can be substituted for dill or basil.
Follow the FDA food-safety guidance when preparing and storing eggs. With sweet corn, concentrated tomatoes, melted cheese, and creamy avocado dressing, air fryer summer frittata is a fresh and dependable warm-weather meal.
